O momento pós-colheita é crítico, pois nessa etapa há muitos danos, o que implica diretamente na perda da qualidade da fruta. Por esse motivo, geraram-se alguns aproveitamentos devido à perda das frutas, como a fabricação de geléias, compotas, licores, vinhos etc. Portanto, o estudo de Análise e quantificação do teor alcoólico do vinho artesanal da jabuticaba torna-se relevante, como contribuição para novas fontes alimentares derivadas de espécies nativas e inseridas nos hábitos alimentares dos brasileiros, onde nesse trabalho durante a identificação das propriedades físico-químicas do vinho de jabuticaba foi possível quantificar 17,5% de teor alcoólico; além de a análise indicar acidez total em 187 meq/L e acidez volátil 0,6 meq/L.</span></span></p><p><strong>ABSTRACT:</strong><em> One of the largest fruit producers in the world is Brazil, including subtropical fruits, which includes jabuticaba. It is produced in several regions of Brazil, besides being a tasty fruit, has many beneficial properties to health, among them helps to prevent cardi-ovascular diseases, but the benefits are observed not only in the consumption of fresh fruit, but also in beverages (Wine) and jams. It is present in a large part of Brazil, being a fruit tasty and with many health benefits, in the prevention of cardiovascular diseases, cardiac, and among others, not only its in natura consumption, but also its wine. The post-harvest moment is critical, because at this stage there is a lot of damage, which directly implies loss of fruit quality. For this reason, some uses have been generated due to the loss of fruits, such as the manufacture of jams, jams, liqueurs, wines, etc. There-fore, the study of Analysis and quantification of the alcoholic content of the artisanal wine of jabuticaba becomes relevant, as a contribution to new food sources derived from native species and inserted in the eating habits of Brazilians, where in this work during the identification of the physicochemical properties Of the jabuticaba wine it was possible to quantify 17.5% of alcohol content; Besides the analysis indicate total acidity at 187 mEq / L and volatile acidity 0.6 mEq / L.</em></p> ER -
